smells good anyway

Searing meat terrifies me.  Hot oil jumping out of a Dutch oven?  Panic.  Cold sweats.  Why am I such a pussy in the kitchen?  Time to change, Madge, time to change.  I will face my fear!

I just seared a chuck for dinner.  I think it went well.  Clapping for myself.

because it hurts!!! that's why you're scared. hot oil can give 3rd degree burns.

while that might have scared the bejesus out of you, that said, i often sear and pan fry tofu and meats myself. and no 3rd degree burns yet! just a few little jumps from baby hot oil pricks. (that sounds dirty, but i can't think of any other way to type it...)
